Description
Huehuetenango is farmed high and dry. This lot is picked between 1,800 and 2,000 metres in the Cuchumatanes, where warm air off the Tehuantepec plain keeps frost away. Washed, fermented for 30 hours, then dried on patios for eight days.
Medium roast. Milk chocolate and dried apricot with a clean malic acidity and a body that carries through a long brew. The kilo bag is what our wholesale customers buy for batch brewing.
For a ten-cup batch brewer, 60 g per litre at 94 °C. As espresso, 18 g in and 38 g out in 28 seconds gives a cocoa-heavy shot that stays sweet in a flat white.
Whole bean, 1 kg, foil bag with a one-way valve. Decant a week of coffee into an airtight tin once the bag is open.
