Description
A natural-process lot from the Guji zone, dried in whole cherry on raised beds for 18 to 21 days and turned by hand every hour through the first week. Grown between 2,000 and 2,150 metres from local heirloom varieties.
Naturals divide people, and this one is the reason. Strawberry, peach and a jammy sweetness that lingers well past the swallow. We roast it light so the fruit reads as fruit rather than as ferment.
Brew it clean. 14 g to 240 ml at 93 °C on a V60, or steep 12 g in 200 ml for two minutes in an AeroPress and press slowly. Grind coarser than you would a washed lot, because naturals give up their sugars quickly.
Whole bean, 250 g, valve bag. We rest naturals ten days before shipping and print the roast date on the back.
