Description
Grown around Planadas in southern Tolima at 1,700 to 1,900 metres, on farms that mill their own coffee and dry it under plastic. We buy it as a single lot each harvest and roast through it until it runs out, so the cup you learn is the cup you keep getting.
The medium roast lands on caramel and orange with a clean, nutty finish. It is forgiving: a grind a step off or water a few degrees cool still gives you something worth drinking, which is why it is our standard kilo for offices.
Brewing tips: 60 g per litre in a batch brewer, or 18 g to 300 ml on a large cone. It takes milk without turning flat, and it makes a decent cafetiere at four minutes.
Whole bean, 1 kg, valve bag. Split it into smaller jars if you brew slowly — a kilo left open on the counter goes tired before you reach the bottom.
