Description
Café des Volcans is our winter blend: two Guatemalan lots grown on the slopes below Acatenango, where the volcanic soil runs deep and the nights come in cold. The farm — a finca that has been in the same family since 1928 — dries the cherries on raised beds behind the mill.
Roasted medium-dark, for a cup with some weight to it: dark chocolate, toasted almond, a little cane sugar in the finish. “Un café pour le matinâ€, as the label says, and it is — it takes milk without disappearing, and it holds its shape in a moka pot or a cafetière.
Ground for filter, medium-fine. 60 g per litre of water at 94 °C, or two heaped spoons in a French press and four minutes… then plunge slowly. Five hundred grams in a valve bag; once it’s open, keep it shut tight and use it inside three weeks — ground coffee doesn’t forgive a shelf.
