Copper Gooseneck Kettle

Description

A stovetop gooseneck with a copper-plated stainless body and a narrow spout that pours slowly enough to wet a bed evenly. The plating is on the outside only: everything the water touches is stainless steel.

The handle is turned beech, pinned at two points and set back from the body, so it stays cool on gas and keeps the balance behind the spout. Full, the kettle tips from the wrist rather than the shoulder.

Fill to the rivet line for two pour-overs and you still have room to swirl. It works on gas and electric hobs, and on induction too, since the base is a flat stainless disc rather than a plated one.

Copper darkens with heat and use. Left alone it goes a deep bronze; if you would rather keep it bright, a little lemon and salt once a month brings it back. Hand wash the inside and keep it out of the dishwasher.
