Description
A natural from Urrao in south-west Antioquia, dried whole in the cherry for eighteen days on raised beds and turned by hand every couple of hours. That much attention is why a natural from a wet region tastes clean instead of boozy.
Roasted light. Strawberry and red grape lead, cocoa nib sits underneath, and the body is heavier than the colour of the beans suggests. Fruit-forward without tipping over into ferment.
Brewing tips: 15 g to 250 ml at 92 °C, ground coarser than you would a washed coffee — naturals give up their sugars easily and go syrupy if you push them. Rest it ten days off roast, longer than our washed lots need.
Whole bean, 500 g, valve bag, roast date on the back. One harvest lot a year, and when it is gone we wait.
