Description
Decaffeinated in Caldas by the sugarcane method: the beans are steamed, washed with ethyl acetate derived from fermented cane sugar, then dried back down. No dichloromethane, and the whole process happens in Colombia rather than after a trip across the Atlantic.
The green coffee underneath is the same grade we buy for our caffeinated lots, which is not a given in decaf. Roasted medium, it gives milk chocolate, almond and baked apple, with enough sweetness that nobody at the table asks which pot is which.
Brewing tips: decaffeinated beans are more brittle and extract faster. Grind one step coarser than usual and drop the water to 92 °C. 15 g to 250 ml on a cone, or 30 g per 500 ml in a cafetiere.
Whole bean, 250 g, valve bag with the roast date. Under 0.1 percent residual caffeine.
