Description
Washed Sidamo from wet mills around Bensa, between 1,850 and 2,000 metres. Cherry is delivered the same day it is picked, fermented for 36 hours, washed in channels and dried on beds for twelve days.
We roast Sidamo a step darker than our Yirgacheffe. It brings out honey and stone fruit and stops the florals taking over, which makes a cup that suits a morning cafetiere and takes a splash of milk without collapsing.
Use 30 g to 500 ml for four minutes in a French press, or 60 g per litre on a filter machine at 94 °C. If your water is soft, drop the dose by two grams and the cup sweetens up.
Whole bean, 500 g, resealable valve bag with the roast date on the back.
