Description
A washed lot from smallholder farms around Gedeb in the Yirgacheffe zone, grown between 1,900 and 2,100 metres. The cherries are hand-sorted, fermented for 48 hours, and dried on raised beds for about two weeks.
We roast it light and rest it for seven days before shipping, so it lands in your grinder close to its peak. Expect bergamot, lemon curd, and a black-tea finish that stays clean as the cup cools.
Brewing tips: 15 g to 250 ml of water at 94 °C works well on a V60 or an AeroPress. Grind a touch finer than you would for a washed Colombian — the beans are dense and take a slow pour without clogging.
Whole bean, 250 g, resealable bag with a one-way valve. Roast date printed on the back.
